Abstract
The title of this research is "Analysis of quality control of coconut oil production (UKM Mr. Thomas Ingunau) in the village of pukdale, East Kupang district, district. Kupang ”to produce coconut oil, UKM Mr. Thomas Ingunau is also trying to improve the quality by reducing the number of defective products in the production process. However, the reality in the field still shows the level of disability, this requires SMEs to improve quality by monitoring the quality of their products. Efforts to maintain and improve the quality of the products produced can be carried out by efficient quality control. The purpose of this study was to analyze the quality control of coconut oil products using the Pareto diagram and fishbone method to analyze the factors that cause defective products in UKM Mr. Thomas Ingunau. The research approach used is qualitative research. The data used are primary data and secondary data. The analytical methods used in this study are Pareto and fishbone diagrams. The next step is to look for the factors that cause damage to a product and then compile a repair proposal. The results of this study indicate that the quality control of coconut oil products in UKM Mr. Thomas Ingunau is still uncontrolled, with an average product defect in November 2020. There are 2 types of defects, namely less fragrant aroma with a total of 30 liters or 18.18%. and black color as much as 15 liters or 9.09%. From the research results, the factors causing this disability are human factors and work methods.
